Resources grow in minutes, and the server can be returned to its previous state in one action. That is what makes a VPS a better fit for growing projects than one fixed machine.
Stores run many dynamic database queries on every page load, cart action and payment. What matters here are the CPU cores and the NVMe disk, rather than the amount of storage.
With root access you install whatever you need — Node.js, Python, Docker, your own database or a queue. The important part is that the memory covers every process running at once.
For an environment that is not running all the time, a smaller plan with hourly billing works out cheapest. Before every experiment you take a snapshot and roll back if you need to.

On a VPS the cores and memory are locked to you and are not shared with other customers. On shared hosting every site on the machine draws from a common pool, which is why a busy neighbour is noticeable. A VPS also gives you full root access — you install what you need without asking permission.
If you have never configured a web server, take the managed option. Unmanaged means a bare machine, and the updates, the security and the backups are your job. The cheaper plan gets expensive the moment something goes down at a bad time.
